have become a favorite around the Warrenton, Missouri area...Chef Irina Struwe, shared her recipe for these...they are good served hot from the oven with lots of butter to slather on. Also excellent to stash a batch in the freezer..
I am assuming this restaurant is still open...Warrenton is at Interstate 70 heading west to Kansas City, about an hour outside St. Louis. Somewhere I also have her recipe for potato soup...
3 1/2 cups raisin bran cereal
[half of a 15 oz box]
1 1/2 cups sugar
2 1/2 cups flour
2 1/2 tsp baking soda
1/2 tsp salt
Stir in a large bowl...set aside
in a separate bowl, mix..
2 cups buttermilk
2 eggs
1/2 cup vegetable oil..
beat until blended..
stir into dry ingredients..
cover and refrigerate overnight or up to 3 days..
when ready to bake, preheat oven to 350 degrees.
spray muffin tins with Pam..
spoon batter in, filling each about 2/3 full..
Bake for 18 to 22 minutes until browned and the tops bounce back when pressed lightly..
makes about 20 regular sized muffins..
