2 [10 0z] pkg. frozen chopped spinach..
thaw and squeeze dry..set aside
in a large microsafe bowl zap 1/2 cup minced onion in 3 Tab. butter on high until softened, about 30 to 60 seconds..
whisk in 1/3 cup flour, continue cooking on high about 60 seconds..
whisk in 1 1/2 cups warm whole milk and microwave on high, whisking every 20 to 30 seconds until smooth, about a minute or so..
seperate 3 large eggs..
lightly beat yolks in a small bowl..
stir in 2 or 3 Tab of the hot liquid into the yolks and stir well..
then whisk warmed yolk mixture into the hot milk mixture...
NOTE: follow this proceedure exactly to prevent curdled eggs...carol
Microwave 20 seconds to heat through..
stir in 1 1/2 tsp lemon-pepper seasoning
3/4 tsp salt
1/4 tsp grated nutmeg
1 dash Tabasco sauce
and spinach..
set aside..
in a grease-free bowl beat 3 egg whites to soft peaks ..
fold into spinach mixture
spread in a buttered 7"x11" glass baking dish...
bake 30 to 35 minutes until set and beginning to brown...garnish each serving with dusting of paprika
I have done this recipe on the stovetop up to the folding in of egg whites and baking..
this is a very elegant side dish if you want to impress guests or treat your family special..
you could also garnish with wedges of hard boiled eggs and paprika...
and by now you all should know my position on nutmeg..only freshly grated from the whole nutmeg!!
serve 8 as a side dish..
