Recipe Introduction
August is peach time in Calhoun County, cut off by the Illinois River and The Mississippi River, north of Alton Illinois. Most residents use the Golden Eagle and Brussels Ferries to commute to the "outer world"..from Highway 79 on the Missouri side you would cross at Winfield at the lock and dam. The rolling hills remind you of areas of Switzerland and Germany. Tiny little towns, stand still in time...local grocery stores, feed and grain, a small cafe, bakery and other signs of days gone by...the peaches of Calhoun County are superb, especially the White Peaches. the church supper in Brussels, Illinois in August serves many kinds of peach desserts...parishioners have their specialties...this is one of them..
1 cup sugar
5 Tab flour
1 cup sour cream
Mix and pour over:
3 cups of sliced fresh peaches in a 9" unbaked pie shell.. Sprinkle on the following topping mixture:
2 Tab Sugar
cinnamon and nutmeg..
Bake at 450 degrees for 10minutes, then at 350 degrees for 30 minutes... I have also used this with fresh pitted apricot halves..
