Recipe Introduction
Alfonso J.Cervantes, was elected Mayor of St. Louis in the 60's...he was a larger than life political figure, always dreaming up ways to make his favorite city a showcase and promote tourism...after the 1964 World's Fair he bought the Spanish Pavillion and had it shipped and rebuilt downtown...Don Breckenridge added a high-rise hotel and used the Pavillion as a lounge and restaurant. Around the same time, A.J. bought a replica of the Santa Maria, Christopher Columbus's ship. It was moored on the river front...eventually it sank....this is his wife Carmen's recipe...
A.J.'s Guacamole
List of Ingredients
1 large tomato, skinned and finely chopped
4 green onions, finely chopped
3 Tab fresh lemon juice
1 tsp Worcestershire sauce
3 drops Tabasco
1/2 tsp salt
dash of pepper
Recipe
Mix in a glass bowl....add:
3 ripe avocados, mashed with a fork...add pits to the bowl and remove before serving with crispy corn chips...cover and chill .... can also be served as salad over sliced tomatoes on lettuce leaf
