do not substitute for the butter..
Sole is a member of the flounder family, a flat fish that yields, thin fillets, it may only be available frozen in other areas.
for those not from the area...St. Peters is an old town west of St. Charles. That has been at the forefront of a building boom since the early '70s...and some of those transplants are now moving further west to O'Fallon and Cottleville ..
all on the march from the eastern edge of the Missouri River at St. Louis County to the western edge of the Missouri River at Rocheport..
Tornatores offers a buffet of 20 items at lunch, Tuesday through Friday with entrees, potatoes, pasta, vegetables, and desserts...
Heat 1/2 cup olive oil in skillet to medium hot..
1 1/2 lbs sole fillets..
stir together.....
2/3 cup flour
1/2 tsp paprika
1`tsp salt
1 tsp. pepper
coat both sides of fillets with mixture..
sauté sole in oil until golden brown, about 2 minutes per side..
place on serving plates .
pour 1/4 cup melted butter on top,
divided among 3 to 4 servings..
sprinkle with 1/4 cup toasted sliced almonds..
garnish with lemon wedges and
fresh mint sprigs.....
