Mexican Burgers

1 1/2 pounds lean ground beef, chicken or turkey
1 (1.25-ounce) package taco seasoning mix
6 slices Monterey Jack cheese
6 hamburger buns, split
1/3 cup guacamole (below)
1/3 cup salsa
Guacamole
1 ripe avocado
2 tsp. fresh lime juice
1/4 cup finely diced seeded tomato (optional)
2 tbsp. chopped fresh cilantro
1 tbsp. minced red onion
1 tsp. minced garlic
1 tsp. minced jalapeno chili (optional)
Salt and pepper, to taste
Recipe
Burger:
Heat coals or gas grill for direct heat. In a medium bowl, combine ground meat and taco seasoning mix. Shape mixture into six patties, about 3/4-inch thick. Cover and grill patties 4 to 6 inches from medium heat 14 to 16 minutes, turning once, until instant-read thermometer registers 160 degrees for ground beef, or 165 degrees for ground chicken and turkey.
Top each burger with cheese slice for the last two minutes of grilling. Place burgers on bottoms of buns; top with guacamole, salsa and tops of buns. Serves six.
guacamole:
Halve and pit avocado. Scoop avocado flesh into a medium bowl and mash with a fork. Stir in lime juice, tomato, cilantro, onion, garlic and jalapeno chili. Season with salt and pepper to taste. Serves six.
