    Grilled Beef Kabobs Over Rice

    List of Ingredients




    1 lb boneless beef sirloin steak, cut into 1-1/2-inch cubes
    1 c Italian salad dressing
    1 sm onion, quartered
    1 sm red pepper, cut into 8 squares
    1 sm zucchini, cut into chunks
    1 sm yellow squash, cut into 4 chunks
    ½ sm green pepper, cut into 4 squares
    2 c hot cooked rice
    2 tb chopped fresh parsley

    Recipe



    DIRECTIONS:

    1 Pour salad dressing over beef cubes in shallow baking dish.

    2 Cover and marinate in refrigerator, turning occasionally, 4 hours or overnight.

    3 Alternate beef, onion, peppers, zucchini and yellow squash on skewers.

    4 Grill or broil, turning and basting with remaining marinade, 5 to 7 minutes or to desired doneness.

    5 Combine rice and parsley; serve kabobs on hot rice.
