� 2oz / 58g butter
� 6oz / 170g caster sugar
� 2 eggs, separated
� 2 � oz / 70g Self-raising flour
� Grated zest and juice of 2 lemons
� 10 fl oz / 285ml milkRecipe
� Grease a glass pyrex bowl or ovenproof dish.
� In a large bowl beat together the butter and sugar until pale and creamy
� Then add the egg yolks, flour, grated zest and juice of 2 lemons and the milk. Don't worry if it looks curdled.
� Whisk the egg whites together until they form soft peaks and fold gently into the lemon mixture.
� Pour the mixture into the dish and place in the microwave.
� Cook on full power for approximately 5 minutes (cooking times may vary according to your microwave power rating).
� Leave to stand for 1 minute before serving.
