    Kathy's Pumpkin Bread

    So good that we usually double!

    List of Ingredients

    4 Eggs
    1 cup Cooking Oil
    3 cups Sugar
    1 1/2 tsp. Salt
    1 tsp. ground cinnamon
    1 tsp. ground nutmeg
    2/3 cup water
    1 16 oz. can pumpkin, (= 2 cup)
    3 1/3 cup flour
    2 tsp. baking soda
    1/3 cup cranberries, dried cherries, or Craisins, **OPTIONAL


    Mix oil, sugar, eggs and pumpkin.
    Add dry ingredients to egg mixture.
    Line bottom of loaf pans with parchment paper for easy removal.
    Bake 1 hour at 350 F.
    Use at least 4 reg. loaf pans or 8 baby loaf pans.

    * If using baby loaf pans, bake for 40 mins.
    * For large muffins (makes 24), fill full and bake 35 - 40 mins.
    * For cupcake sized muffins (makes about 44), bake 12 mins.
