    Aunt Barb's Lemon Jello Cake

    List of Ingredients

    1 yellow cake mix or lemon cake mix!
    1 pkg. (3 oz.) Jello, lemon
    1 tsp. lemon juice
    3/4 cup oil
    3/4 cup water
    4 eggs
    1 cup powdered sugar
    1/4 cup lemon juice, or 2-3 lemons, (save some zest)


    In large bowl, mix together cake mix and dry jello.
    Add oil, lemon juice, water and eggs and beat 5 mins. with mixer.
    Prepare baking pan by using Pam or lining with parchment paper.
    Pour batter into pan and bake at 350 degrees for 25-38 minutes.

    While cake is baking, make lemon juice glaze by combining lemon juice and grated rind (zest) with powdered sugar.

    When cake is done, use serving fork and make holes in cake all over.
    Pour lemon juice glaze over cake.

    If you can wait , refrigerate 2 hours for glaze to set.
