    A Hernandez family favorite, except for Tony!

    List of Ingredients

    4 lbs. chicken, cut-up, thighs, or breasts (skin on)
    1 tbsp. oil
    2 (8.25 oz.) jars DONA MARIA® Mole
    3 cups chicken broth



    Add oil to Instant Pot and set to “Saute”.
    Place chicken in pot and sauté in each side 3-4 minutes or lightly browned.
    Remove chicken from pot.
    Add broth and de-glaze bottom of pot.
    Add chicken back to pot.
    Pour Dona Maria sauce over the top and do not stir.
    Cover and seal the pressure valve.
    Cook on “Manual” for 8 minutes (for chicken breasts) or 10 minutes (for chicken thighs).
    Do a quick release of pressure.

    Remove the chicken to a plate.
    Turn Pot to “Saute” and bring sauce to a simmer.
    Let bubble, stirring occasionally, until it is rich and thick, about 10 minutes.
    *Place a layer of paper towels over top as the sauce splatters a bit.

    While the sauce cooks, shred chicken with two forks if desired.
    Return chicken to pot and toss with the thickened sauce.



    Cook chicken your favorite way or use rotisserie chicken (Costco) and shred or leave in pieces.

    In hot frying pan, add mole and smash as you’re frying.
    Once melted to saucy consistency, add chicken broth.
    Mix and add shredded chicken.
    Serve with flour tortillas and choice of fixin's.
