Honey Bran Muffins
1/4 cup wheat bran
3 tablespoons boiling water
1/4 cup skim milk
2 tablespoons brown sugar, packed firmly
2 tablespoons vegetable oil
2 tablespoons honey
2 egg whites or 1/4 cup cholesterol-free egg product
2/3 cup all-purpose flour
1 1/2 teaspoons baking powder
Dash salt
Heat oven to 400 degrees. Spray bottoms only of 6 medium muffin cups
with non-stick cooking spray, or line with paper baking cups.
Mix wheat bran and boiling water. Set aside. Beat milk, brown sugar,
oil, honey and egg whites in medium bowl. Stir in bran mixture and
remaining ingredients just until flour is moistened (batter will be
lumpy).
Divide batter evenly among muffin cups (cups will be about 3/4 full).
Sprinkle with sugar if desired. Bake 20-25 minutes or until golden
brown. Remove from pan immediately.
Makes 6 muffins.
