    Brownies

    Recipe Introduction


    Chocolate Fudge Brownies


    1 pound sweet butter
    2 cups sugar
    1 cup unsweetened cocoa
    1 1/2 tablespoons vanilla extract
    4 large whole eggs
    1 cup all-purpose or cake flour
    1/2 teaspoon salt
    1/2 teaspoon baking powder
    6 to 8 oz. choc. chips
    1/2 to 1 cup coarsely chopped walnuts


    Heat oven to 325 degrees. Cut butter into 6 pieces and melt in saucepan. Set aside. Mix sugar and cocoa together on low speed.


    Add butter and vanilla gradually until blended. Increase speed to medium. Blend 30 seconds. Beat in eggs, one at a time, until smooth, about 1 minute. (Mixture will be loose, shiny and dark brown.)


    In small bowl, blend flour, salt and baking soda. Add to chocolate mixture. Blend briefly on low speed until smooth. Add 1 cup chocolate chips. Blend. Pour batter into a 9-by-12-inch no-stick bake pan. Top with chocolate chips and walnuts as desired. Bake 10 minutes. Reduce oven to 275F and bake 25 to 30 minutes more, until set and tester comes out fairly clean. Do not overbake. If in doubt, take it out. It can be slightly underbaked. Makes 12 (3-inch) squares.
