    SPINACH BALLS

    2 boxes frozen spinach - cooked and drained
    5 eggs, beaten
    3/4 cup butter or margarine, melted
    1/2 cup parmesean cheese (I like to use fresh grated, but can used canned)
    1/2 tsp. Accent
    2 cups Pepperidge Farm Stuffing Mix
    1/2 tsp. salt
    1/4 tsp. pepper
    1/2 cup onion, chopped fine

    Combine all ingredients. Chill slightly so they will be easier to handle. I use a scoop to make meatball sized balls and place on a cookie sheet to flash freeze. I line my cookie sheet with the new Release Reynolds Foil (I love it!). I then place them in a freezer bag. I can take out how ever many I want to bake.

    Bake at 325' for 10 - 15 minutes.

    *You can just freeze the mixture in a freezer bag after you mix it up. Thaw, then form into balls, and bake. I personally like having them completely ready to go.
