    1/2 cup butter or margarine

    1 cup sugar

    2 eggs

    3 medium, ripe bananas, mashed (about 1-1/4 cups)

    1 tbsp. milk

    1 tsp. vanilla

    2 cups flour

    1 tsp. baking soda

    1/2 tsp. ground cinnamon

    1/4 tsp. salt

    1/2 cup chopped nuts, optional







    Recipe



    1. Preheat oven to 350º. Grease and flour a 9x5-inch loaf pan.

    2. Beat together butter and sugar. Add eggs; beat until well blended. Combine bananas, milk, and vanilla. Mix flours, baking soda, cinnamon, and salt. Alternately blend banana mixture and flour mixture into creamed mixture. Stir in nuts if desired.

    3. Pour batter into prepared pan. Bake for 60 to 70 minutes or until bread tests done. Cool 10 minutes; remove from pan and cool completely. Yield: one loaf.

    I sometimes add a 1/2 cup of either white or chocolate chips.
