    List of Ingredients


    • 3lb pork roast
    • 1lb dry pinto beans
    • 2 cloves garlic, minced
    • 1 Tablespoon ground cumin
    • 1 Tablespoon dried oregano
    • 2 Tablespoon chili powder
    • 1 Tablespoon salt
    • 4oz chopped green chili
    • water


    Instructions


    1. Cover beans with water and soak overnight in slow cooker. In morning, remove beans (reserve soaking water) and put roast in bottom of slow cooker. Add remaining ingredients, including beans and soaking water. Add more water if needed to cover ingredients. Cook on high 1 hour and then low for 6 hours. Remove meat and shred with two forks. Return meat to slow cooker and cook on high 1 more hour. Serve topped with grated cheese, chopped onions and tomatoes. Serves 12-16
