Mexican Manicotti

1/2 lb. Gound Beef
1 C. Refried beans
1t oregano
1/2 t cumin
1 t. garlic powder
4 oz. chopped green chilies
8 uncooked manicotti shells
1 1/4 c. water
1 c. salsa
1 c. sour cream
1/4 c. green onions, chopped
1/4 c. black olives, sliced
1/2 c. Monterey Jack or cheddar cheese, shredded
Cook ground beef until no longer pink. In bowl combine: beef, beans, chilies, and spices. Put all into a zip bag with a corner cut off. Fill each of the shells. Or stuff with a spoon. Freeze. (The shells I get come in a box with a inside tray. I just put them back in the tray and back in the box to freeze. Then when frozen, I put the trays into gallon sized zip bags.)
To serve: Take out as many of the manicotti as you want. Put them in a casserole. Mix the salsa and water and pour over all. Cover tightly with foil and bake at 350 deg. for 1 hr. If you thaw the shells first, you can bake them for 35-40 mins. For the last 5 mins. sprinkle on the cheese, olives and onions. Then top with sour cream.
