    Zucchini Crescent Pie


    List of Ingredients


    • 4 cups thinly sliced zucchini
    • 1 cup chopped onion
    • 1/2 teaspoon salt
    • 1/2 teaspoon pepper
    • 1/4 teasoon garlic powder or 1 clove
    • 1/4 teaspoon basil
    • 1/2 teaspoon oregano
    • 2 T chopped parsley
    • 8oz Mozzarella, shredded
    • 2 eggs lightly beaten
    • 1/4 cup margarine
    • 2 T dijon mustard
    • 8oz tube crescent rolls


    Instructions


    1. Unroll crescent dough and arrage in sprayed pie pan. Stretch to fit and spread evenly. Seal seams and spread with mustard. In large skillet sautezucchini and onion in margarine until zucchini is tender but firm. Add salt, pepper and garlic. Remove from heat. In a large bowl combine cheese and eggs. Stir into the saute. Transfer to pie shell. Move oven rack to low position or par bake the shell. Preheat oven to 325 degrees. Bake about 20 minutes. Let cool for 10 minutes before serving.
