Banana Cake

Serves 10-12 *Cook ahead, cake must cool completely before finishing, and must be refrigerated at least 2 hours prior to serving. *
Cook time 30-35 minutes
You will need:
MAIN INGREDIENTS:

1 box yellow cake mix (you *will not* be using the package directions)
2 medium ripe bananas, mashed
2 eggs
4 oz. package instant banana pudding
Non-stick Spray
DRY INGREDIENTS:

1/4 cup packed brown sugar
1 teaspoon ground cinnamon
1 box vanilla wafers
LIQUID INGREDIENTS:

1 cup Lemon-Lime Soda Pop
4 1/2 cups Water
GET TURBO READY:
----------------
Combine cake mix, brown sugar and cinnamon in large bowl. Add bananas, eggs and soda pop. Mix well until smooth (the bananas should be essentially pureed within the mix). Spray interior of the cake pan with non-stick cooking spray, pour cake mixture into cake pan and place cake pan onto the steam rack. *While the cake is cooking, prepare the package of banana pudding according to package directions. Place pudding in refrigerator until after cake has cooled completely. *
LET'S START TURBO COOKING!

1. Place the steam rack into position. Add 1 1/2 cups water into the base and cook (valve open) on high heat for 10 minutes.
2. Reduce heat to medium. Remove cover and add 1 1/2 cups water into the base. Recover and cook (valve closed) for 10 minutes.
3. Raise heat to maximum. Remove cover and add 1 1/2 cups water into the base. Recover and cook (valve open) for 10 minutes.
4. Check for doneness by sticking a clean toothpick down the center of the cake. If it does not come out clean, recover and cook an additional 5 minutes at maximum heat (valve open).
5. Remove spring form pan and steam rack from the TurboCooker and set aside to cool. Let cake cool completely before removing from spring form.
FINISHING THE CAKE

Retrieve previously prepared pudding and vanilla wafers. Place cake on a large dinner plate or serving platter. Using rubber spatula, cover the cake on all sides with the pudding. (Note that you will not necessarily use all of the pudding here, just create a desired thickness, about 1/8" thick is a usually sufficient.) Place enough whole wafers around the edge of the cake to form a solid edge. Sprinkle approximately 1/4-1/2 cup of crushed wafers on the top of the cake and refrigerate at least two hours prior to serving.
Notes: Remember that this cake must remain refrigerated. This cake is very sweet, and is best served in small slices.
