Lime-Chile Chicken

1 3 1/2 to 4 pound chicken, cut into pieces
3/4 cup flour
1 (1 ounce) envelope taco seasoning mix
2 eggs beaten with 2 tablespoons water
Prepare the marinade in a large bowl. Wash and thoroughly dry the chicken pieces. Add to the marinade and toss to coat well. Cover and refrigerate for 1-4 hours.
Toss the flour and Taco seasoning mix together on a plate. Dip the chicken in the beaten egg mixture and coat well with taco-flour mixture. Rotate the chicken in the flat standard basket for 45 minutes or until browned and cooked through.
Tip: You may skip the marinating in this recipe and simply coat the chicken in egg and the taco-flour mixture before rotating.
.........Lime Chili Marinade: makes about 1/2 cup..........
1 (4 ounce) can diced green chilies
1 green onion, minced
1/4 cup fresh lime juice
1 tablespoon minced fresh cilantro
Stir all ingredients together and use t marinate a whole roasting chicken, chicken breasts, shrimp or fish fillets.
