    6 tbsp. butter

    6 tbsp. flour

    1/2 cup milk

    1/2 cup light cream

    3 cups chicken broth

    1 envelope Cup-a-Soup Cream of Chicken soup mix*

    1/4 tsp. white pepper

    Pinch of salt

    1 cup chicken, cooked and finely chopped

    1/2 cup croutons, slightly crushed


    1. In a saucepan, melt butter. Blend in flour; cook and stir for one minute. Stir in milk, cream, chicken broth, soup mix, pepper and salt. Cook over medium heat, stirring constantly, until mixture thickens and comes to a boil. Reduce heat and stir in chicken. Gently return soup to boiling. Top individual servings with croutons and serve immediately. Yield: 4 servings.

    For an extra kick add chopped green chili.
