    2 large eggplants
    ¼ cup tahini
    1 head garlic
    2 tbsp. Lemon juice
    1 tbsp. Olive oil
    1 tbsp. Cumin
    paprika

    Recipe

    Pierce the skin of the eggplant and broil until skin is black on both sides. Throw in cold water and peel.

    Drain the flesh and pop into a blender. Add all ingredients and blend on low until creamy.

    Pour into a bowl, drizzle with some olive oil and garnish with paprika and a sprig of parsely.
