    Cuban Chicken with Yellow Rice

    List of Ingredients

    2 TBS olive oil
    4 chicken thighs or breasts
    1/2 tsp salt
    1/4 tsp pepper
    2 roasted peppers, quartered or small jar pimentos
    1 medium garlic, minced
    1-10oz pkg yellow rice
    1/2 pound frozen peas, do not thaw
    3-1/2 cups hot water

    Recipe

    Heat oil in large deep skillet over mod-high heat. Add chicken and brown both sides.

    Transfer to a plate and sprinkle with salt and pepper.
    Pour water into skillet and add garlic; bring to a boil.
    Add rice and stir. Add chicken and boil gently.

    Cover and cook until liquid is absorbed and rice is tender. About 20 mintues.

    Spoon peas on top and then add the peppers. Cover and cook 3-5 more minutes.
