    Sweet Chili Chicken with Cashews

    List of Ingredients

    700 g single chicken breast fillets, sliced thinly
    1/4 cup finely chopped fresh coriander leaves
    2 birdseye chillies, seeded and chopped finely
    1 tbsp sesame oil
    1 clove garlic, crushed
    2 tbsp peanut oil
    1/3 cup (80 ml) rice vinegar
    1/4 cup (60 ml) sweet chili sauce
    1 tbsp lime juice
    3/4 cup raw cashews, toasted
    1 cup snow pea sprouts

    Recipe

    Combine chicken, coriander, sesame oil and garlic in large bowl. Cover. Refrigerate 3 hours or overnight.

    Heat peanut oil in wok or large frying pan; stir-fry chicken mixture, in batches, until chicken is browned and cooked through.

    Return chicken mixture to wok with vinegar, sauce and juice; stir-fry until sauce boils. Add cashews; stir-fry, tossing, until combined. Remove wok from heat, gently toss sprouts with chicken mixture.
