    1/2 cup chopped onion (1 med)
    1/2 cup chopped green sweet pepper
    1 clove garlic, minced
    1 T veg. oil
    1 t chili powder
    1 28oz can tomatoes, undrained and cut up
    3/4 cup uncooked long grain rice
    1 4oz can diced green chili peppers, undrained
    several dashes bottled hot pepper sauce
    1/2 cup shredded cheddar cheese (optional)
    1 cup water
    1/4 t salt
    pepper

    Recipe



    In a large skillet cook onion, sweet pepper and garlic in hot oil until tender. Add chili powder; cook 1 minute more. Stir in undrained tomatoes, rice, chili peppers, hot pepper sauce, water, salt and 1/8 tsp black pepper.

    Bring to boil, reduce heat and simmer covered for 20 minutes or until rice is tender and most of the liquid is absorbed. If desired, sprinkle with shredded cheese.
