    Wild Rocket Salad

    List of Ingredients




    150 ml balsamic vinegar
    25 ml white wine vinegar
    75 ml sunflower oil
    115g Parmesan cheese
    2 x 50g packets wild rocket

    Recipe



    Boil 125 ml balsamic vinegar in a pan for 5 minutes to make a glaze.

    Whisk remaining balsamic vinegar with white wine vinegar and oil, for dressing. Season.

    Grate half cheese; toss with rocket leaves and dressing. Peel rest of cheese into shavings.

    Serve salad with shavings and drizzle over syrupy glaze.
