    Banana Mango Salsa

    List of Ingredients




    1 large mango, diced
    1 large banana, diced
    1 large lime, juiced
    1 green onion, sliced
    ½ TB diced jalapeno or more to taste (I prefer to use the canned)
    ¼ cup chopped cilantro
    ¼ tsp. Garlic powder
    ¼- ½ teaspoon ground cumin
    ½ teaspoon curry powder
    I TB sugar
    Salt to taste
    1 TB finely minced candied ginger (optional)

    Recipe



    In a medium bowl, mix lime juice (I add pulp too), garlic powder, cumin, curry, sugar and stir to combine. Add jalapeno, green onion and cilantro. Fold in mango and banana and gently toss to coat with juices. Add ginger if desired. Add salt and adjust other seasonings to taste. Cover and refrigerate for 30 minutes for seasonings to meld.

    Note: You can substitute peaches, papaya or nectarines for the mango if you wish.

    Serve with chicken, fish, pork or tortilla chips.
