Sopa de Ajo (Garlic Soup)

6 tbsp olive oil
6 cloves (or more) garlic, chopped
6 slices bread, cut in cubes
1 tsp paprika
1 ¾ liter boiling water or stock
2 tsp. Salt
4 eggs
chopped parsley
Recipe
Heat the oil in a soup pot or heat-proof casserole and add the chopped garlic and bread cubes. Fry until lightly golden, then stir in paprika.
Immediately add the boiling water and salt. Cover and simmer slowly for 5-10 minutes. The bread should almost dissolve in the broth.
Place the soup in 4 individual earthenware bowls and add one egg per bowl. Poach the eggs in the soup (in oven or on top of stove) and serve with a garnish of chopped parsely.
Alternatively, the eggs can be beaten together and stirred into the pot of hot soup, letting it cook just until the eggs have set, thickening the soup.
