    5 pounds peaches (about 15 peaches)
    1/2 cup water
    1/2 cup orange juice
    3 1/2 cups sugar
    1/4 tsp. cinnamon
    1/8 tsp. ginger

    Recipe



    Dip peaches in boiling water to remove skins. Pit peaches. Place peaches, water, and orange juice in a large saucepan.

    Bring to a boil; reduce heat, and simmer until peaches are softened, about 10 minutes, stirring frequently.

    Remove from heat. Place in a food processor or blender. Process until smooth. Pour back into saucepan.

    Bring to a boil; reduce and simmer, uncovered, at lowest setting, for 2 or more hours or until peach mixture thickens, stirring often.

    Spoon into hot half pint canning jars. Process in a boiling water bath for 10 minutes.
