Basque Tomatoes

8 tomatoes, firm
1/2 cup parsley, chopped
1 clove garlic, minced
1 tsp. salt
1 tsp. sugar
1/4 tsp. pepper
1/2 cup black olives (optional)
2 tsp. olive oil
2 Tbs. tarragon vinegar
1 tsp. Dijon mustard
Recipe
Slice tomatoes and spread them in shallow dish. Sprinkle with parsley. Combine remaining ingredients, mix well, and pour over tomatoes. Cover and refrigerate. Drain before serving. May be made 2 days ahead.
