Pear & stilton soup

Serves 4
List of Ingredients
- 2 Small pears.
- Stilton (As much as you want)
- 1 onion
- Small carrot
- butter
- 2 medium potatoes
- Cinamon stick
- sugar
Instructions
- In a pan, poach the pears whole with a cinamon stick, sugar & cover. When poached, remove from heat & chop into cubes.
- In another pan melt some butter & add the pears with the onion. Cook gently then add the chopped carrot & potatoes.
- After 2-3 minutes add the stock. Cover & simmer for about 30-40 minutes. Don't reduce the juice.
- When cooked blitz in a blitzer, season to taste.
- Gradually adding in the grated stilton, taste for your own pleasure. As much or as little as you want.
Final Comments
Served with a nice baquette or a light salad.
