List of Ingredients
2 # raw shrimp, peeled and deveined
2 Medium onions, sliced
1 14 oz. can artichoke hearts, drained
1 5 oz. jar pimento stuffed green olives, drained
1-1/2 C vegetable oil
1 Garlic clove, crushed
1 C white vinegar
3 T sugar
2 t salt
1-1/2 t celery seed
1/4 C capers, with liquid
1 Head Romaine lettuce, torn into bite size pieces
Recipe
Boil shrimp 3 minutes or until pink. Drain and chill. Combine shrimp, onions, artichokes, and olives (in medium glass container).
Mix oil, vinegar, sugar, salt, celery seed, garlic and capers; pour over shrimp mixture. Cover and refrigerate 6 hours or overnight, stirring occasionally. Serve over lettuce.
Serves 8 to 10.
