    Grandma Bostick's Jumbo Raisin Cookies

    Source of Recipe

    Grandma Bostick, of course

    Recipe Introduction

This recipe was given to me by my ex husband's Grandmother many years ago. She recently passed away at age 93. Amongst the many fond memories I have of her, is being served these cookies for BREAKFAST when I was a young, newlywed visiting her! They were and still are such a treat. I cut the recipe in half now because her recipe could feed an army.

    List of Ingredients

    2 C Raisins
    1 C Water
    4 C Sifted Flour
1 t each: Baking Soda, Baking Powder
    1 t Salt
    1/2 t each: Cinnamon, Nutmeg
    1 C Shortening
    1 3/4 C Sugar
    2 Eggs
    1 t Vanilla
    1/2 C Chopped Nuts

    Recipe

Bring Raisins and Water to boil; boil until Raisins are plump (3 minutes). Cool thoroughly, but do not drain.
Sift Flour, Salt, Soda, Baking Powder and Spices.
In another bowl, cream shortening, blending in Sugar, Eggs and Vanilla. Mix well. Stir in the Raisins and Water. Gradually add Flour and blend thoroughly. Stir in Nuts.
Drop by tablespoonsful onto greased cookie sheets 2" apart.
    Bake @ 375 12 minutes.
    Yield: 3 1/2 Dozen Cookies
These keep well in a cookie tin kept in the freezer.
