    Butter Rum Muffins

    List of Ingredients




    1 1/3 C white sugar
    2/3 C vegetable oil
    4 eggs
    2 T baking powder
    1 t butter flavoring extract
    1 t rum extract
    2 C milk
    4 C flour
    12 oz. bag butterscotch chips

    Recipe



    In a large bowl, cream the sugar, eggs and vegetable oil. Add flavorings and baking powder. Alternately add the milk and flour just until combined, then fold in the butterscotch chips. Spoon into 12 well greased Texas size muffin cups. Bake 375 degrees for 25 minutes. This makes very large muffins and are best eaten warm.
