    2 1/2 C flour
    1 t salt
    2 t baking soda
    1 C vegetable shortening or butter
    2 C sugar
    2 C mashed very ripe bananas (about 6 med.)
    4 eggs, slightly beaten
    1 C chopped walnuts
    1 1/2 to 2 t cinnamon, opt

    Recipe



    Preheat oven to 350. Grease and flour 2 loaf pans. Stir and toss together the flour, salt, and baking soda. In a large bowl, mix shortening, sugar, mashed banana, eggs, and walnuts. Add the combined dry ingredients and stir
    just until batter is thoroughly blended. Pour into prepared pans and bake for 65-70 minutes or until skewer inserted into center comes out clean.
    Remove from oven and let cool in the pan for about 5 minutes; turn out onto a rack to cool completely before slicing.
    As with most quick breads, it always tastes better the next day.
