Yam Bread
List of Ingredients
6 Tablespoons of butter and 1 cup of sugar
2 eggs, beaten
1 cup cooked and mashed sweet potatoes
1/4 teaspoon cloves
1/2 teaspoon salt
1/4 teaspoon soda
1/2 teaspoon nutmeg
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon cinnamon
1/3 - 1/2 cup milk
1/2 cup chopped nuts
Recipe
Preheat oven to 350 degrees. Butter 8 x 8 loaf pan.
Blend togetherbutter and sugar to a creamy consistency.
Add eggs and mashed sweet potatoes
Sift Together:
cloves
salt
soda
nutmeg
flour
baking powder
cinnamon
To wet mixture, add dry ingredients alternately with:
1/3 - 1/2 cup
Add nuts.
Pour into loaf pan and bake for 50-55 minutes.
Top with caramel icing if desired. Freezes well. Microwave to reheat.
May also be baked in lined muffin tins at 400 degrees for 15-20 minutes or, in madeline pan at 400 degrees for 10 minutes.
