    1 3/4 C all-purpose Flour
    3/4 t Baking Powder
    Pinch of Salt
    4 Eggs, beaten until thick and lemon-colored
    1 C Sugar
    1 t grated Lemon rind
    1 t Lemon juice
    1 C Strawberry, Raspberry, or Fruit Jam of choice
    Confectioner's Sugar for garnish

    Sift together the flour, baking powder, and salt. Beat the sugar into the eggs until the mixture is light and fluffy. Fold in the flour mixture, lemon rind, and lemon juice. Spread into two 8" greased and floured cake pans. Bake in a preheated 350F oven for 20 to 25 minutes, until a toothpick inserted in the
    center comes out clean. Cool slightly before removing from the pans, then cool completely on wire racks. Place one cake on a serving plate, spread the jam over the top, and top with the remaining cake layer. Dust with confectioner's sugar immediately before serving. Serves 6 to 8.
