    Chocolate Covered Surprise Cookies

    List of Ingredients




    Cookie:
    3/4 cup sugar
    3/4 cup butter, softened
    1 egg
    1 1/2 teaspoons vanilla
    1 3/4 cups all purpose flour
    1/3 cup unsweetened cocoa
    1/2 teaspoon baking soda
    1 (10 oz.) jar maraschino cherries, drained, reserve juice, halved

    Frosting:
    1 ( 6 oz.) package semi-sweet real chocolate chips
    2 tablespoons reserved cherry juice

    Recipe



    Heat oven to 350 degrees. Combine sugar and butter in large mixer bowl. Beat at medium sped, scraping bowl often, until creamy, 2 to 3 minutes. Add egg and vanilla, continue beating until well mixed, 1 to 2 minutes.
    Shape dough into 1 inch balls. Place 1 inch apart on ungreased cookie sheet. Press cherry half into center of each cookie. Bake 8 to 10 minutes or until set. Cool completely.
    Meanwhile, combine frosting ingredients in 1 quart saucepan. Cook over low stirring occasionally, until chips are melted and frosting smooth, 4 to 5 minutes. Place 1/2 teaspoon frosting on top of each cookie to hide cherry half.
    Yield: 3 1/2 dozen
