    Chocolate Macaroons

    2 3/4 C Confectioner's Sugar
    1 1/4 C Almonds (abt 6 oz)
    3 T Unsweetened Cocoa Powder
    4 Lg Egg Whites

    Recipe



    Preheat oven to 375*.
    Line 2 large baking sheet with parchment.
    In food processor, finely grind almonds and 1 C Confectioner's Sugar. Transfer to large bowl.
    Mix in 1 2/3 C Confectioner's Sugar and Cocoa.
    Beat Egg Whites in medium bowl until soft peaks form. Fold into Nut mixture in two additions.
    Spoon batter into large pastry bag fitted with 1/2: plain tip.
    Pipe onto prepared sheets in 1 1/2: rounds, spacing apart (batter will spread to abt 2-3").
    Bake until puffed and dry looking on top, about 12 minutes.
    Cool on sheets on racks.
