    Chicken a la Greque

    List of Ingredients

    1 3 # Chicken
    Salt and pepper
    1 t Oregano
    2 cloves Garlic, minced
    3 T Butter
    1/3 C Water
    1/4 C Lemon juice
    1 t grated Lemon rind




    Recipe

    Season the chicken inside and outside with salt and pepper.
    Mix together half the oregano and one clove minced garlic and rub on the inside of the chicken.
    Brown the chicken on all sides in the butter in a large fry pan.
    Put the chicken in the crockery pot.
    Sprinkle the chicken with the remaining oregano and garlic.
    Add the water to the fry pan and scrape the bottom.
    Pour over the chicken.
    Cover and cook on the low setting for 8 hours.
    Mix together the lemon juice and grated rind and add to the chicken for the last hour of cooking.
    Carve the chicken.
    Skim the fat from the sauce and pour over the chicken.
    Serve immediately.
