Lowfat Chocolate Flan

1 C plus 1 T sugar
2 T cocoa powder
2 14-oz cans fat-free sweetened condensed milk
1 C egg substitute
3/4 t pure vanilla extract
1/4 t pure almond extract
Recipe
1. Preheat oven to 350 degrees.
2. Lightly spray an 8-inch cake pan with nonfat cooking spray.
3. Combine 1 cup sugar and 1/4 cup water in a medium saucepan and cook over medium heat, stirring constantly, about 15 minutes.
4. Pour sugar mixture into prepared pan and cool completely.
5. In a small saucepan, combine 1 1/2 cups water, 1 tablespoon sugar, and cocoa; bring to a boil over medium-high heat, stirring frequently, and cook until sugar and cocoa are dissolved and blended. Remove from heat and cool completely.
6. In an electric blender or food processor, combine milk, egg substitute, vanilla, and almond extract; process until blended. Add cocoa mixture and process until blended smooth.
7. Pour cocoa mixture over sugar in cake pan; place cake pan in a shallow baking dish and fill with 1-inch of water.
8. Cover with foil and bake in preheated oven for 1 1/2 hours, until knife inserted in center comes out clean.
9. Remove pan from water and cool to room temperature; cover and refrigerate at least 8 hours before serving. To serve, loosen flan with spatula and invert onto serving plate.
