    Microwave Custard Rice Pudding

    List of Ingredients




    1 C regular white rice (uncooked)
    2 C water
    2 C 2% milk
    3 eggs
    2 t vanilla extract
    1 t almond extract
    1/2 C sugar
    3 T cornstarch

    Recipe



    Place rice in large, microwaveable casserole bowl.
    Add water, stir very slightly, cover.
    Microwave on 100% for 5 minutes (do not stir).
    Microwave on 30% 10 minutes (let rest 10 minutes).

    In separate mixing bowl, mix cornstarch and sugar.
    Add 1/4 cup of milk to this mixture and mix well.
    Add eggs and beat well.
    Add remaining milk and beat.
    Microwave 100% for 3 minutes, stir.
    Pour mixture over rice, stir.
    Microwave 100% for 3 minutes, stir.
    Microwave 100% 2 minutes, stir.
    Microwave 100% 1 minute, stir.
    Add vanilla & almond extracts, stir.

    Add cinnamon, apple pie spice, or pumpkin pie spice for a
    different flavor.
