    I acquired this recipe from a restaurant where I was employed many years ago. Unfortunately, the recipe is 'institutional size'. I've broken it down to make 3 loaves, rather than 15. A great decadent dessert to serve to a large crowd.

    List of Ingredients




    1/2 C + 3 T Boiling Water
    2 3/4 oz Cocoa
    2 3/4 oz Butter
    13 1/2 oz Brown Sugar
    4 oz Eggs, room temperature
    11 oz Flour
    1 1/4 t Soda
    1 t Cream of Tartar
    3/4 t Salt
    1 1/3 C Buttermilk
    3/4 t Vanilla

    Recipe



    Pour boiling water over cocoa ans stir into a well blended paste. Cool to room temperature.
    Cream butter and brown sugar on medium speed until well combined, approx 5 minutes.
    Add eggs, beat until light, approx 5-8 minutes.
    Add room temp cocoa paste, beat until wellblended, approx 2-3 minutes.
    Sift flour, soda, cr. of tartar & salt together.
    Add alternately with buttermilk.
    Add vanilla.
    Pour 15 oz batter into 3 greased loaf pans. Cover with foil.
    Steam in a bain marie* 30-35 minutes until toothpick comes out clean.
    Cool 5 minutes. Remove from pans.
    Slice and serve with Supreme Sauce (recipe listed under Sauces).

    * Set loaves in a baking pan filled with 1" of water.
