    Tartufo

    This is one of my favorite desserts to order when dining at my favorite restaurant. Theirs is made with raspberry ice cream covered with a dark chocolate shell. Yum!

    List of Ingredients




    1 1/2 pints chocolate ice cream
    15 chocolate wafer cookies, finely chopped
    1 1/3 C semi sweet chocolate chips
    4 t vegetable oil
    1 -10 oz package frozen raspberries in syrup, thawed, pureed and strained
    raspberries for garnish

    Recipe



    Using a 1/2 cup ice cream scoop, scoop ice cream into 6 balls, roll in chopped cookies. Place on waxed paper lined baking sheet.
    Cover and freeze at least 2 hours or until firm.
    Heat chocolate chips and oil in small saucepan over low heat until smooth and melted. Cool. Place ice cream balls on wire rack over wax paper.
    Ladle 2 tablespoons melted chocolate over each ball, coating the top and sides. Freeze for at least 1 hour or until firm.
    Spoon raspberry sauce in dessert dishes. Arrange tartufo on top of sauce. Garnish with fresh raspberries, if desired.
    Serve immediately.
    Serves 6.
