    Nonstick cooking spray
    1 C firm-textured white bread cubes (about 1 1/4 slices Italian or
    sourdough bread)
    1/3 C fat-free milk
    2 T sugar
    2 T miniature semisweet chocolate pieces
    3 T refrigerated egg product, thawed, or 1 egg
    1/2 t finely shredded orange or tangerine peel
    1/4 t vanilla
    sifted powdered sugar or fat-free pressurized whipped dessert topping,
    opt.

    Coat two 6-ounce individual soufflé dishes or custard cups with nonstick
    cooking spray Divide the bread cubes between the prepared dishes.
    In a small saucepan combine the milk, sugar, and chocolate pieces. Cook and
    stir over low heat until chocolate is melted. Remove from heat. If
    necessary, use a wire whisk to beat until smooth.

    In a small bowl, combine the egg product, orange peel, and vanilla.
    Gradually stir in the chocolate mixture. Pour over the bread cubes in
    dishes. Press lightly with the back of a spoon to thoroughly moisten bread.
    If desired, cover and refrigerate for up to 2 hours before baking.
    Bake, uncovered, in a 350 degree oven for 15 to 20 minutes or until the tops
    appear firm and a knife inserted near centers comes out clean. Cool
    slightly on a wire rack. If desired, sprinkle the warm puddings with
    powdered sugar.
    Servings: 2 (can be easily doubled to serve four)
