    Cod Provencale

    List of Ingredients




    1# Cod fillets
    1 T Olive Oil
    1 medium sized Onion, chopped
    2 cloves Garlic, peeled and crushed
    3 medium sized ripe Tomatoes
    12-18 Capers
    8 Black Olives, stoned
    1 t Thyme
    1 Bay (laurel)leaf
    1 T freshly chopped Parsley
    Salt, opt.
    Freshly milled Black Pepper


    Recipe



    Chop Cod into pieces about 2 ½” square.
    Heat the Oil in a non-stick saute pan and cook the Onions and Garlic until they are soft. Add the Fish and cook gently for about 5 minutes more.
    Peel, seed and chop Tomatoes and add them along with the Capers, Olives, Thyme, Bay leaf, Parsley, Salt, (if adding), and Pepper.
    Simmer gently for about 10 minutes. Serve with Rice or sauteed Potatoes
    Serves 4
    Note:
    You may substitute Haddock, Monkfish or Turbot or any firm fish for the Cod.
    The Capers and Olives can be omitted, if you choose, but they really add a lot of flavor.
