    Mediterranean Flounder

    List of Ingredients




    2 # Flounder filets
    S & P to taste
    1/4 C White Wine
    3 T Olive Oil
    6 Cloves Garlic, minced
    4 Roma Tomatoes, diced coarsely
    1/2 C Wine
    10 Kalmata Olives
    1 1/2 T Lemon Juice (fresh)
    2 T Fresh Basil leaves, chopped

    Recipe



    Season fillets with S & P. Roll pinwheel fashion and place in shallow pan. Pour 1/4 C wine over fish and drizzle with 1 T olive oil. Cover and bake @ 350* for 18 minutes.
    In a medium skillet, heat remaining olive oil and garlic. Cook one minute, not allowing garlic to brown. Add tomatoes and cook 2 minutes more, stirring often. Add 1/2 C wine and olives and cook 2 minutes more. Add lemon juice and basil and remove from heat.
    Remove fish to heated plates and spoon sauce over fish.
    Serves 4.
