    Low Sodium New York Pickles

    List of Ingredients




    1 C White Vinegar
    1/2 C Water
    1/2 - 3/4 C Sugar, or equivalent amount of sweetener
    1 - 2  T Fresh Dill
    1 clove Garlic
    3 - 4 Cucumbers sliced
    1 Onion, thinly sliced
     

    Recipe



    Combine White Vinegar, Water, Sugar, Dillweed, and Garlic clove in an enamel pan. Bring to a boil.
    Pour over Cucumbers and Onion slices.

    This keep weeks in the fridge. Vary it by adding sliced Carrots or sliced Sweet Red Peppers. When chopped, this also makes a good sandwich topping.

    Sodium content in milligrams:
    2 T Dill (fresh)=1
    1 clove Garlic=1
    4 Cucumbers=24
    Recipe total=26
