Light Turkey Enchilada Casserole
List of Ingredients
1 # lean ground turkey
1/4 C chopped onion
2 cloves garlic, minced
6 oz tomato sauce
1 t chiles, bottled, chopped
2 t chili powder
1 t fresh lemon juice
1/2 t ground black pepper
1/4 C frozen green peas, thawed
4 corn tortillas
2 oz lowfat mozzarella cheese -- shredded
Dash cayenne pepper
Recipe
Mix ground turkey, onion and garlic and place in a 2-quart casserole.
Microwave on High 4 to 6 minutes, stirring, until turkey loses pink color. Drain.
Stir in tomato sauce, chilis, chili powder, lemon juice, and pepper, and microwave on High another 4 to 6 minutes, stirring mid-cycle. Stir in peas.
In 1 1/2-quart casserole or baking dish, layer tortillas, turkey mixture, and cheese alternately, topping with some of the cheese and dash of cayenne.
Microwave on High 2 to 3 minutes until cheese bubbles. Let stand a minute or so before serving.
Yield: 6 servings.
