    List of Ingredients




    4 # Flour (use a good bread flour, durum flour) 2-3 cups water
    2 T Olive Oil
    1 T Salt

    Recipe



    Heat water, olive oil, and salt in pan on stove until almost boiling. Put flour in bowl and add about 2/3 of water and begin to stir in to mix. Add water till mixture just holds together. Remove from bowl and knead with hands until well mixed. Set aside and allow to rest for about 5 minutes, covering with inverted bowl or cloth. Cut into small pieces a few at a time, and roll like a thin breadstick. When you have a few strands, line up and cut into very small pieces, about ¼ inch in length. Coat lightly with flour by tossing. Form shape by pressing dough ball with finger. Place finished pasta single layer on cloth and allow to rest until ready to cook. Cook in briskly boiling water with a little oil and salt till tender. Time will vary, usually 10-15 minutes. Cover with your favorite sauce and enjoy.
